Thanks to the chef's passion for Andalusian cuisine, I'm continually fascinated by the economy of this wonderful region. Here in Andalusia, food isn't just about nourishment, but also about enjoyment, sharing, and tradition. The local cuisine further reflects the culture: simple, authentic, and fresh.
With Andalusia's best dishes, you can always enjoy a gourmet meal or a simple, artisanal meal. Yesterday's favorites were inspired directly by Andalusian cuisine.
1. Salmorejo – Gazpacho's Creamy Brother 🍅
Still, everything you know about gazpacho is about experiencing it for yourself and being authentic: you'll definitely appreciate salmorejo. The tomato stash and gazpacho cream are plentiful, with a traditional touch of bread and an olive spritzer.
💡 My tip: This dish tastes best with finely sliced Serrano ham, which keeps well. Served with a refreshing glass of Fino Sherry – the perfect lunch for a hot day.
2. Espetos – Grilled Sardines on the Beach 🐟
The basic traditions and techniques are simple but well-known: sardine espetos. The son of sardines, spring skewers, and grilling over a wood fire on the beach. If you don't fill it, you won't get any salt and it won't work.
🏖️Which cann-man is a genius? At a chiringuito (beach bar) on the coast, near Málaga or Nerja. Enjoy the freshness and flavor with your toes in the sand.
3. Rabo de toro – Braised Oxtail 🥩
For lovers of hearty and aromatic cuisine, Rabo de Toro is a must. Originally from Córdoba, the tradition involves seasoning the rib with red wine, tomatoes, and herbs, which is why these are often part of the dish.
🍷 Wine recommendation: Pair Rabo de toro with a full-bodied Rioja Far or a spicy Andalusian rota.
4. Gambas al ajillo – Shrimp in Garlic Oil 🍤
This restaurant is a classic throughout Andalusia, and for good reason. Gambas al ajillo are succulent shrimp sautéed in hot olive oil with garlic, chili, and a hint of lemon. Their mild aroma alone is enticing.
🔥 My tip: Try traditional tapas bars and delicious bread. So simple, yet so delicious.
5. Flamenquin – Andalusian Cordon Bleu 🧀
It's a new dish, but a delight. It's a brand-new product in Córdoba and a Spanish art form of cordon bleu. A flamenco is prepared with Serrano ham and cheese, and pork is rolled, grilled, and roasted to perfection.
🤤 Perfect for: A quick lunch with a cold gazpacho.
6. Churros with Chocolate – The final product or the perfect snack 🍩
If you prefer churros, Andalusia is ideal for afternoon tea. The crispy dough balls, dipped in a thick, warm chocolate sauce, are a real treat.
